The piece is a further development of the site-specific tuna-piece we created as commission by the Stromereien Festival in Zurich in August this year. The performance deals with issues around a vanishing resource – and explains how Japanese culinary traditions have an impact on maritime ecology around the world. It shows how Switzerland might offer a solution to the world’s increasing appetite for sushi…
